minutesTempted to cook rice out of a box? This takes just as long and tastes twice as good. Serve with your favorite Indian main dish and warm naan.
Ingredients
1 cup (250 mL) basmati rice
1 Tb (15 mL) ghee (clarified butter)
2 bay leaves
2 black cardamon pods
4 cloves
1 cinnamon stick (about 3-4 inches long)
1 tsp (5 mL) cumin seeds
2 cups (500 mL) water
Salt to taste
1 Tb (15 mL) chopped coriander leaves
Directions
- Soak the rice in water for 10 minutes.
- Heat a medium pot over medium heat, then melt the ghee. Add the spices and warm for 30 seconds until fragrant.
- Stir in the rice and cook for 10-15 seconds. Add the water and salt and bring to a boil. Cover and cook over low heat until the water is evaporated and the rice is done (about 12 minutes).
- Serve hot with coriander leaves as garnish.
