Tempted to cook rice out of a box? This takes just as long and tastes twice as good. Serve with your favorite Indian main dish and warm naan.

Ingredients

  • 1 cup (250 mL) basmati rice

  • 1 Tb (15 mL) ghee (clarified butter)

  • 2 bay leaves

  • 2 black cardamon pods

  • 4 cloves

  • 1 cinnamon stick (about 3-4 inches long)

  • 1 tsp (5 mL) cumin seeds

  • 2 cups (500 mL) water

  • Salt to taste

  • 1 Tb (15 mL) chopped coriander leaves

Directions

  • Soak the rice in water for 10 minutes.
  • Heat a medium pot over medium heat, then melt the ghee. Add the spices and warm for 30 seconds until fragrant.
  • Stir in the rice and cook for 10-15 seconds. Add the water and salt and bring to a boil. Cover and cook over low heat until the water is evaporated and the rice is done (about 12 minutes).
  • Serve hot with coriander leaves as garnish.
