Too many grilled cheese sandwiches use mild (i.e., bland) cheddar slices with barely buttered bread. Don’t skimp on the butter or the cheese, or the bread for that matter. Once you’ve got that down, spice it up with a yokey fried egg and half an avocado.

Ingredients
Butter
1 egg
2 slices of bread
1 half-cup (125 mL) shredded cheese cheese
1 half avocado
Directions
- Heat a sauce pan or skillet to medium-high and melt a tablespoon of butter. Fry the egg to desired doneness. I like it a bit runny for this recipe.
- While the egg is frying, butter one side of each slice of bread.
- When the egg is done, scoop it up with a spatula, and place one slice of bread in the skillet. Put the egg atop the bread. Spread the shredded cheese atop the egg. Place the avocado half atop the cheese and then the last slice of bread (buttered side up) atop the avocado. Press down slightly with the spatula to flatten sandwich.
- Grill the sandwich until the bottom bread slice is browned to your satisfaction and the cheese has started to melt. Flip carefully and grill until the other slice of bread reaches same level of doneness.
- Eat hot, with chips or fries.
