Cannellini beans in Alfredo sauce

Ingredients

  • 1/4 cup (60 mL) unsalted butter

  • 8 garlic cloves, grated

  • 1 cup (250 mL) 35% cream

  • 1 cup (250 mL) grated Parmesan cheese

  • Salt and pepper to taste

  • Pinch of nutmeg

  • 2 cans cannellini beans, or small white navy beans, rinsed and drained

  • Parsley leaves, chopped, for garnish

Directions

  • Warm a sauce pan over medium heat, then melt the butter, 1 to 2 minutes. Once the butter is melted, add the grated garlic and cooking, stirring, about 1 minute. Don’t let it brown.
  • Pour in the cream and whisk over medium heat for about 5 minutes.
  • Add the grated cheese, salt and nutmeg (if using) and continue to stir, for about 5 minutes until the sauce has thickened.
  • Add the beans, stir until the beans are completely coated with the Alfredo sauce, and cook at medium for about 5 minutes.
  • Serve in bowls over rice with chopped parsley leaves for garnish, if desired.
