Fettucine with zucchini and Parmesan

1 lb (450 mL) fettucine
2 medium zucchini
1 Tb (15 mL) olive oil, more for drizzling
Grated Parmesan cheese
Salt, freshly ground black pepper, red pepper flakes
Directions
- In a medium pot, bring water to a boil, then prepare fettucine according to package instructions.
- While pasta is boiling, slice or cube zucchini and fry in oil in a skillet.
- Drain pasta, serve in four bowls, then top with zucchini and grated cheese to taste. Add salt, pepper and red pepper flakes to taste. Drizzle extra virgin olive oil as desired.
